Range hoods and kitchen exhaust

Part of: Ventilation

Also: range hood, cooker hood, extractor hood, kitchen extract, extractor fan

An extract fan over the cooking surface that captures the plume before it mixes into the room and discharges it outdoors. Capture, not airflow, is what decides its effect — and a hood that recirculates through a filter captures nothing.

What it is

A range hood is source control applied at the moment of emission: it works on the plume rising from the pan and the burner, before that plume becomes room air. That is why it is the most effective single measure against cooking emissions and why its performance is so uneven in practice.

What decides the result is capture efficiency — the fraction of the plume the hood actually takes — and capture depends on geometry more than on fan power: how far the hood overhangs the cooking surface, how high above it, whether the back burners or the front are in use, and whether the fan was switched on before the pan heated rather than after the smoke appeared.

Two failure modes recur. A recirculating hood passes air through a filter and returns it to the kitchen, which removes grease and odour and leaves nitrogen dioxide and fine particles in the room. And a ducted hood in a tight dwelling cannot extract air that has no way of getting back in.

Each row is one Finding — a sentence as printed in one study, recorded with its page in the Coridum Knowledge Base. Follow the Finding number for the exact wording and the citation. Checked says who verified the row: machine means every automatic check passed and the surrounding text was read; person means someone read the sentence in the document. Rows are re-checked by a person over time. The studies are curated in the Coridum Knowledge Base; the reading of them together is a Claim, shown separately.
